I did my apprenticeship as a pastry cook in a famous pastry shop in France, after studying insurance! I then moved to Canada and worked in some bakeries and pastry shops. I opened my own pastry and chocolate shop in Montréal and met Didier Girol, a well-known Chef, who became my mentor in hygiene and food safety 11 years ago. I created Hygiène et Salubrité Alimentaires Inc. and its website, and I'm certified by the MAPAQ as an official trainer.
