I did my apprenticeship as a pastry cook in a famous pastry shop in France after studying insurance. I then moved to Canada and worked in bakeries and pastry shops. I opened my own pastry and chocolate shop in Montreal and met Didier Girol, a well-known Chef who became my hygiene and food safety mentor 13 years ago. I've created Hygiène et Salubrité Alimentaires Inc. and its website, and I'm certified by the MAPAQ as a certified trainer. I also carry out preventive inspections and help start-up food businesses.
